I’ve always been fascinated with these delicate cookies. My first taste was at Ladurée in Paris when I was in high school. And I was hooked! Their colorful shells and gooey filling are too good to pass up.
This was the second installment of Standard Education at Eastern Standard in Kenmore Square. The restaurant hosted an afternoon of classes ranging from cocktails to cookies. I signed up for the Flawless French Macaron class through Eventbrite and it didn’t disappoint!
We took careful notes as we walked through the steps. I never knew how precise you had to be! From the exact amount of time to whip the egg whites to the delicate way of handling the shells.
Chef Lauren’s instructions were very thorough, yet easy to follow. She brought us through all the steps from start to finish (and even let us taste along the way– my favorite kind of baking)!
The shells begin as these little round dollops (again, Chef Lauren makes it look easy). The trick to getting it right is all in the wrists.
Our final results! I chose to use the pistachio, peanut butter, passion fruit and raspberry fillings for my cookies. I even got creative and made a pink/green combo cookie.
It was a great experience! While I’m not sure I’d be able to make a flawless batch on my first solo try, I feel much more confident in the details.
